As much as I like munching on raw veggie sticks and salads, sometimes I don\u00e2\u20ac\u2122t feel like they\u00e2\u20ac\u2122re filling enough, but in the warmer months a stir-fry can also feel too heavy.\u00c2\u00a0 If you blanch at the idea of blanched vegetables (pun very much intended) this delicious dish may be just what you need to change your mind. Happy cooking!<\/p>\n<p>&nbsp;<\/p>\n<p>Prep and cooking time: Under 10 minutes<\/p>\n<p>Serves 2 as a side dish<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS<\/p>\n<p>100g broccoli (about \u00c2\u00bd), cut into bit-sized pieces<\/p>\n<p>1Tbs. salt<\/p>\n<p>4Tbsp. crunchy peanut butter<\/p>\n<p>2-3Tbsp. milk or soy milk<\/p>\n<p>2 tsp. sugar<\/p>\n<p>1tsp. soy sauce<\/p>\n<p>&nbsp;<\/p>\n<p>METHOD<\/p>\n<ol>\n<li>Add the salt to a small saucepan of water and bring to the boil.<\/li>\n<li>Rinse the broccoli and add to the saucepan. Blanch for about a minute (usually about when the water starts to bubble again).<\/li>\n<li>Drain and run under cold water a couple of times to cool it down. Set aside to drain.<\/li>\n<li>Add the peanut butter to a large bowl and mix well. Add the milk or soy milk, sugar and soy sauce.
