It\u00e2\u20ac\u2122s basically a less sweet, non-alcoholic version of <i>umeshu<\/i> and makes for a super refreshing drink, especially in the sweltering summer heat.<\/p>\n<p>Like <i>umeshu<\/i>, it is very simple to make and the homemade version is a lot more delicious than the shop-bought stuff. Leave to completely dry.<\/li>\n<li>Using a toothpick, remove the little stub near the stem of the <i>ume<\/i>. Wash and leave to completely dry (leave overnight if you have time).<\/li>\n<li>Layer the sugar and the <i>ume<\/i> in the jar. Add the vinegar towards the end. Close the jar and refrigerate for 1-2 weeks or until most of the sugar has dissolved. To speed up the process, gently turn the jar every couple of days.<\/li>\n<li>Serve over ice with water or soda water to taste. Store in the fridge.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/www.hyogoajet.net\/hyogotimes\/wp-content\/uploads\/2015\/06\/11-Before.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignright size-medium wp-image-5082\" alt=\"OLYMPUS DIGITAL CAMERA\" src=\"http:\/\/www.hyogoajet.net\/hyogotimes\/wp-content\/uploads\/2015\/06\/11-Before-300x196.jpg\" width=\"300\" height=\"196\" srcset=\"https:\/\/www.hyogoajet.net\/hyogotimes\/wp-content\/uploads\/2015\/06\/11-Before-300x196.jpg 300w, https:\/\/www.hyogoajet.net\/hyogotimes\/wp-content\/uploads\/2015\/06\/11-Before-175x114.jpg 175w, https:\/\/www.hyogoajet.net\/hyogotimes\/wp-content\/uploads\/2015\/06\/11-Before-512x334.jpg 512w, https:\/\/www.hyogoajet.net\/hyogotimes\/wp-content\/uploads\/2015\/06\/11-Before.jpg 800w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>HINTS AND TIPS<\/p>\n<ul>\n<li>The addition of vinegar makes the <i>ume<\/i> juice slightly tangy.\u00c2\u00a0 If you prefer a sweeter cordial, omit the vinegar, but after washing and drying the <i>ume<\/i>, freeze them for at least 24 hours before continuing from step 3, otherwise it takes really long for the sugar to dissolve.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>Discard any <i>ume<\/i> that are rotten or badly bruised. If they are only slightly bruised or the damaged section can be easily cut off, you can still use them but place them in a separate jar just in case they go mouldy.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>If you\u00e2\u20ac\u2122re short on fridge space like me, once the sugar has dissolved, take out the <i>ume<\/i> and discard them.
