Super Speedy Avocado Pasta Sauce

(Food processor required)


Living in Japan, there are times that we miss certain foods or tastes from back home. For me, avocado is one of these refreshing tastes I like to revisit now and then. Here’s a super fast and simple recipe for those tiring days where you just want to whip up a quick dinner. Summer is here and this sauce is also great cold!

 

P.S. You can find avocados at your supermarket or local veggie vendor at around ï¿¥100 -ï¿¥200.

 

 

Yield: 2~3 servings mixed in with pasta

 

Ingredients:

 

1 clove Garlic

4-6 Basil leaves (I suggest buying a basil plant at the start of the season & saving the seeds for next year)

1-2 Tbsp Lemon juice (about ½ a small lemon)

1 Tbsp Olive Oil

1 Ripe Avocado (peeled & pitted)

Salt & Pepper to taste

Extra liquid (water, milk, soymilk, etc.) in case the sauce is too thick

 

 

Instructions:

 

1. Pulse the basil and garlic clove in a blender to mince.

2. Add olive oil, avocado, and lemon juice. Blend till well mixed.

3. Taste the sauce and check for consistency.
Add a bit of extra liquid if the sauce is too thick and add salt and pepper to taste.

4. Add sauce to your favorite pasta and sautéed protein/vegetables as desired.
