Kicchiri Kitchen: Tonkatsu (とんかつ)

This is a simple but delicious Japanese favourite.

(Serves 4)

4 pork cutlets
flour for dusting (komugiko)
breadcrumbs (panko)
2 eggs, lightly beaten
a little salt and pepper
some salad oil
cabbage, cucumber, and tomato
tonkatsu sauce (とんかつ ソース)

1. Make small cuts in the fat of the pork cutlet
2. Tenderize the pork on both sides by hitting it with the back of a knife
3. Put salt and pepper on both sides of the pork
4. Dust pork with flour, dip in the egg and then the breadcrumbs
5. Deep fry the pork until golden brown
6. Serve on shredded cabbage with tomato and cucumber
7. Pour tonkatsu sauce over it as you like
8. Serve with rice and miso soup
